First of all, you will have to scan an amiibo, and to do that you will have to hold down left on the directional pad on the joy-con or the pro controller. After that, you just have to put the amiibo on the sensor, on joy-con put it on the right thumbstick and for pro, the controller put it on the Nintendo Switch logo.

You will get an assured reward for each amiibo you scan. You will be given 1-up mushroom or even a random power-up as a reward for the amiibo scan. Also, there are 3 amiibos that have a special effect when scanning.

The Cat Mario will place you in an invincible catsuit for a short duration. You will get a power star for invisibility when having the catsuit.

Bowser Jr. can only be used in the Bowser’s Fury mode at its full potential. And if you scan the amiibo then whoever is playing Bowser Jr. will do a shockwave attack. Also, don’t think of spamming it, as it has a limit and it will cool down, and only after that, you can use it. It will give you a random power-up or a 1-up mushroom when you use it in the normal mode.
